Millet variety from West Africa
Fonio is an ancient staple food. In botanical terms, it is a type of finger millet. We purchase our fonio from the West African processing plant Bodhi Foods in the city of Niamtougou in northeastern Togo. Bodhi Foods works with over 800 family farmers in the Doufelgou region. Each family farms an average of 0.8 hectares of land.
Transfer the fonio to a tightly sealed container to guard against moisture and pests. It will keep for at least two years from the date of production when stored in a cool, dry place.
