Seeds from the apricot stone. The kernels are roasted and seasoned with tamari soy sauce. As with almonds, there are always bitter specimens among sweet apricot kernels. For this reason, apricot kernels aren’t suitable for children. Adults should eat a maximum of 50 grams per day.
Nuts and seeds stay fresh longer when they are stored in a cool, dark place and, most importantly, protected from moisture. At storage temperatures below 16°C, pests such as moths don’t stand a chance. Store nuts in a cellar, for example. Use an airtight container to protect them from moisture. You can freeze nuts to extend their shelf life.
