Recipe: Pulled Jackfruit Burger

Fast food with selected ingredients: jackfruit is transformed into a vegetarian version of pulled pork. Recipe by Laura Grotenrath, Zero Waste Your Life

Ingredients (per person)

Burger

  • 200 g of canned jackfruit
  • Paprika powder, salt, sugar
  • Oil for frying
  • BBQ sauce (ready-made or homemade)
  • Burger bun
  • Onion, tomato and cucumber slices, lettuce
  • Ketchup, mustard, vegan mayonnaise

Homemade Fries

  • 2 large potatoes
  • Salt, pepper, paprika,
  • Vegetable oil

Preparation

  1. Wash the potatoes and cut them into sticks.
  2. Season the potato sticks with salt, pepper, paprika and oil.
  3. Bake in the oven at 180 degrees for around 20-30 minutes, flipping them halfway through. The fries are crispest when they are only in one layer on the baking sheet.
  4. Tear the jackfruit with your hands or a fork, then marinate it with paprika, some salt and sugar for 15 minutes.
  5. Sear the jackfruit in oil for 10-15 minutes.
  6. Mix the seared jackfruit with 30-50 ml BBQ sauce.
  7. Cover the burger bun with pulled jackfruit and toppings (onion, tomato and cucumber slices, lettuce, ketchup, mustard, vegan mayonnaise).
  8. Serve the burger with fries and enjoy.
