Recipes & more Nuts

Anyone looking for a plant-based alternative to milk is spoiled for choice in many places. Rice, oat, soy, quinoa, almond or cashew milk – the list goes on. What many people don’t realise is you can easily make this milk yourself. For instance, using Brazil nuts and cashews.Recipe by Anina Mutter, Ekkoist

There are many ways to make plant-based milk. This Brazil nut milk is particularly suitable for hot beverages, such as turmeric latte or hot chocolate. The nut milk does not need to be sieved in that case.

Ingredients (for 2 cups)

  • 3 Brazil nuts
  • 1 handful of cashew pieces
  • 1 tbsp hulled hemp seeds
  • 1 pinch of cinnamon
  • 1 pinch of salt
  • 1 date or 1 tsp maple syrup to taste (option)

Preparation

  1. Put the Brazil nuts and cashews into a bowl. Boil water and pour over the nuts. Allow to soak for at least 5-10 minutes.
  2. Then blend the water and nut mixture. Add the hemp seeds, spices and sweeteners of your choice and mix on the highest power setting. The more powerful the blender is, the finer the result will be.
  3. If any remaining pieces bother you, the nut milk can be filtered through a cloth or fine sieve. And the filtered-out nut pieces are ideal for adding to cake mix or bread dough.
  4. Finally, simply mix with your chosen drink or keep in the fridge. Enjoy!
